At Martin Family Farms we grow nearly 40 variety of peppers, from sweet to mild and hot to insanely hot! Although we use specific peppers for our product recipes, we try to grow new and different pepper varieties every season to continue experimenting with flavors and heat levels.
Our gourmet paprika is a blend of dried seasonal pepper powders and is deliciously sweet and smokey, followed by a mild spice, resulting in our "Triple-S" paprika blend. For our blend development we sent blind tastings of various powder blends across the country to obtain feedback from friends, family, chefs and foodies to grade and evaluate the various blends. The feedback we received was not only used to create the final recipe, but to also help us determine what pepper varieties we would continue to grow on our farm.
Traditionally, in the process of making smoked paprika the select peppers are slowly dried and smoked over oak wood, however we begin our drying process with a mild smoke over Alderwood, completing the drying process in commercial grade food dehydrators. Once the peppers are completely dehydrated, they are pulverized to powder and then sifted to ensure a consistent particle size and texture. Our final product is a meticulous blend of flavors that will enhance and elevate your foods and meal to an entirely different level.
